We traveled to St. Kitts, British West Indies a couple of summers ago and discovered a ruggedly beautiful & largely secluded island. The terrain changes drastically as you drive north to south– like, desert-to-rain-forest-drastic. What drew us there was a little open-air cottage on the very south tip of the island with its own secluded beach & view of sister island Nevis from every window. It was pure magic.
This beautiful tree with fern-like foliage & a crown of fiery red flowers is everywhere on St. Kitts & is quintessentially Caribbean. It goes by a myriad of names: Royal Poinciana, Flame Tree, & Flamboyant to name a few. Poinciana is also the name of a restaurant on the island where we had, hands down, the best food of our entire trip! Compared to other restaurants with sea views, Poinciana is a fairly humble-looking place. But it came highly recommended & for good reason: their focus is clearly on the quality of the food above all else. Spiny lobster thermidor & fried goat cheese were among our favorites that night along with our delightful waitress whose passion for food & laughter was contagious.
